Week 7: Sheet Pan Suppers – Chris’s pick

One of the best moments during Chris’s cooking extravaganza from Sheet Pan Suppers was when he got everything prepped, put it in the oven and was like, “uh…I don’t have anything to do, for a while.” Mostly because both of us are so used to incredibly labor intensive recipes that the ones we chose from this book made us feel kind of lazy, which is the best.

Needless to say, Sheet Pan Suppers is well on its way to becoming one of our favorite cookbooks ever. The recipes are ridiculously easy, full of flavor, and quick. Can’t ask for much more than that for a family.

Chris chose the Lemon-Herb Sole on Crispy Potato Rafts. Second best moment from Chris, after making this recipe: “I think I want to put everything on potato rafts now.” (yes, please. they were amazing.)

The most difficult part of the recipe was slicing the potatoes and mincing the garlic. Really. Everything else was just…simple assembly.

Chris followed how the author put together the rafts exactly.

He cut up a Meyer lemon and pats of butter for each fillet.

And laid everything on top of the rafts.

Back it went into the oven, and then… magic.

It was an amazing dinner. Served with some baby kale greens (with Meyer lemon squeezed on top.) Wonderful. I even ate the leftovers the following day, and I’m really not a fan of leftover fish. (It was amazing on the second day as well.)

Conclusion: We’ll be utilizing this cookbook A LOT. I will update when we cook more recipes from it. Also, Ms. Gilbert has a blog, with recipes. It can be found here – and I will be making stuff quite frequently from it.
